Savoury Pancakes (gluten free)

Ingredients

  • 1 cup of gram flour

  • 1/4 tsp baking powder

  • 1 tsp rock salt

  • 1/4 tsp turmeric

  • 1tsp ground cumin

  • 1/2 finely chopped onion

  • 1/2 finely chopped red pepper

  • Juice of 1 lime

  • Handful chopped fresh fenugreek leaves (optional)


Preparation

  1. Add all ingredients into a bowl and mix thoroughly ensuring all vegetables are evenly coated with the flour and spices (you can add any other additional finely chopped veg).

  2. Add water to the dry mixture slowly to achieve a thin batter consistency.

  3. Heat a tablespoon of ghee in a frying pan.

  4. Using a ladle, pour some of the mixture into the pan, ensuring that it is evenly spread out.

  5. Leave to cook for a few minutes, and then flip over to cook on the other side.

  6. Repeat steps 4-5 until all the batter has been used up.

  7. Makes around 5-6 pancakes, depending on size of pan.
