
Ingredients
1 tsp cumin seeds
1 tsp mustard seeds
2 cloves garlic, finely chopped
1 large onion, finely chopped
1 inch piece ginger, finely chopped
Veggies of your choice, finely chopped. Eg pepper, spinach
1 tsp salt
1/2 tsp turmeric
Handful of curry leaves
Poha (flattened rice), washed and rinsed (Do not leave soaking water afterwards as otherwise it will turn mushy).

Preparation
Heat 1tbsp of sesame oil and 1 tbsp of oil in a pan.
Add the cumin and mustard seeds and cook gently until they begin to 'pop'
Add in the chopped garlic, onion and ginger and cook until soft and has just turned light brown in colour.
Add in the chopped vegetables and cook until soft, mixing well throughout. Harder veg will require more cooking time. If you are adding green leafy veg, add after the more hard veg as these will just need a few minutes to wilt down.
Add in the salt, turmeric and curry leaves and continue to mix well.
Add in the washed and rinsed poha (flattened rice) and mix gently. This type of rice only requires a few minutes of cooking. There is no need to add any additional water to the pan as the rice will have soaked enough when you have washed and rinsed beforehand. If you find it is sticking to the bottom of the pan, then just add 1-2 tbsp of water, turn the gas off and put the lid on.
